Vietnamese cuisine isn't familiar to me. Pho may just be a street food for some; but I respect foods that take hours to prepare. The bone broth in the beef pho I ordered took at least 6 hours of slow simmering. You choose your meat cuts. I had flank, tendons, and meat balls. The basil leaves, bean sprouts, hoisin sauce, and sriracha sauce are on the side to be mixed by you to your taste. The rice noodles give a softer texture; compared with egg and wheat flour noodles in ramen. This is not fancy; but it is rich, tasty, and very filling.
