as someone who loves ceviche and sour-forward dishes, i really enjoyed this. the first dish had a nice balance of saltiness and acidity, the scallops with the blue icy sauce were a total flavor bomb, and the creamy soup was the best dish of the night. the mains were just okay—the pork had unique elements, but the flavor and technique didn’t really stand out for me since i prefer mains that highlight the protein more. what i really appreciated, though, was their service style—out of all the fine dining restaurants i’ve tried, from local to international 3 michelin-starred, flo had the fastest …
