Via mare is something that I hold dearly to my heart. I remember going to Landmark in Makati as a child. I’d order a salted duck egg bibingka, my mom would order the cheddar cheese puto bumbong. It wasn’t even Christmas and I felt like it was. Fast forward to 2021. Things feel so different now. I can’t easily go to Makati. But when I saw Via mare here in Evia I was overjoyed! I normally would order delicious homecooked Filipino meals from our neighbors, but none of our neighbors sell honest to goodness puto bumbong. So for 8x the price of what we pay our neighbors for a meal, we were willing to spend that because we were craving. And I especially like how they have an option to add quezo de bola shavings for it. Another really nice dish that's not usually available anywhere is the pako salad. I love pako. And I love it with salted egg and shrimp even more. Food - the merienda foods (ginataan, palitaw, puto bumbong, tofu) we ordered are decent (as how it should taste). However the tortang alimango has small bits of shell in it, making chewing a bit unpleasant. The food taste is for those with healthy palate, and not flavorful preference. The price is pricier than that that of Goldilocks and somewhat similar to Max’s. Service is excellent. Bibingka topped with queso de bola was great. Otherwise food was bland. Really appreciated the performance waiters put for the birthday greeting though! 5 stars for service.
